
Today I’m going to show you how to make green scrambled eggs – in other words – eggs with a bunch of greens blended into them.
If you don’t mind eating some bright green eggs (they honestly look like you’ve dumped a bottle of green food colouring on them), it’s an excellent way to get more leafy green vegetables into your diet without really noticing them.
You can make them savoury or sweet… I got the original idea from a wicked cool reader named Carli who was making them savoury style, but I decided to adapt them a little and add avocado to change the texture and half a banana or some apple to give it a sweet flavour.

Recipe:
2 – 3 eggs
1/2 an avocado
1 cup greens (kale or spinach would probably work best)
1/2 – 1 banana or apple
Blend in the blender, and cook em up like scrambled eggs!

Does it taste like eggs?
I’m not a egg eater. I’m not a fan of the taste/texture. Will it mask the flavor with the greens?
The texture is the same…. but yeah the banana and greens definitely give it a different flavour

This is an interesting way to get your greens in. What do you think about vibrant health’s field of greens veggie drinks? I think it tastes gross. haha

Sorry, this has nothing to do with eggs (although your recipe looks very yummy, and I’m definitely going to try it!). Anyway, I just wanted to ask you if you had ever heard of quercetin and bromelain in relation to acne? I was trying to find a herbal remedy for my seasonal allergies, online (on iherbs.com, which I highly recommend btw), and I came across a supplement containing quercetin, which is a natural biflavonoid that helps to support healthy histamine levels, and bromelain, which is an enzyme derived from pineapple stems, known to support a healthy immune system. Basically, the two together are highly anti-inflammatory, and anti-histaminic, and can help lower blood sugar levels. Some of the people who reviewed the supplement said it helped them to clear their acne dramatically (up to 80% for some), others said it totally cleared their food and seasonal allergies… so voilà, just thought I’d mention what I read as it might really help some people in their fight against acne.
Also, on a personal note – I posted a comment a couple of months ago about weaning off the birth control pill. Just a brief update; I’m 2 months into the weaning process + no gluten, soy, & dairy and LOTS of leafy green smoothies, and so far no sign of a pimple (although I’m going to remain very humble about that as I have no idea what the next few months will be like) 🙂
