Today I wanted to share with you a recipe that sounds a little weird, but it’s actually been a big hit with the group of people who were doing my candida cleanse program a few weeks ago. They loved it!
But you don’t have to be on the candida diet to appreciate this tasty dish – it’s delightful all the time.
It’s called eggplant french ‘toast’. And believe it or not, it actually tastes a lot like real french toast, so if you are missing your bread, give this recipe a shot!
Eggplant French Toast
Ingredients:
• 1 small eggplant
• 2 eggs
• Lots of cinnamon
• 1/8 teaspoon nutmeg
• Dash of vanilla
• 2-5 drops of stevia or xylitol to taste (or honey or any other natural sweetener if you aren’t on the candida cleanse)
• Coconut oil
• Optional: desiccated coconutInstructions:
Cut the top and bottom stem off the eggplant and then cut it in half length-wise. With each half, cut long, thin strips of eggplant. Make them thin so that the eggplant will cook quickly when you fry it.
In a pie plate or some other large, flat surfaced bowl, mix eggs, cinnamon, nutmeg, vanilla, and your natural sweetener. Dip eggplant slices in and let them soak for a couple of minutes while the frying pan heats up. Afterwards, coat them in the optional desiccated coconut for extra deliciousness.
Cook the eggplant 2-3 minutes in coconut oil on each side until golden brown and eggplant is not so stiff. Serve on its own, with some butter, a bit more natural sweetener, a dollop of berries, or one of the candida safe syrups below.
Alternatively to doing the full flat slices of eggplant for this recipe, you could also cut up the eggplant into cubes. I believe it might be easier to fit it all in your frying pan and also cut down on cooking time.
Candida safe syrup recipes:
Ginger Syrup
• 4 cups water
• 4 inch piece of fresh ginger root
• 1/2 teaspoon white stevia powder, or 3-5 drops of liquid stevia
• 2 tablespoons vanilla
• 1 tablespoon fresh lemon juiceInstructions:
Peel and finely chop the ginger, while you bring the water to a boil in a small saucepan. Add the ginger and stevia, then reduce heat to low and simmer for about 10 minutes. Take off the heat and stir in vanilla and lemon. Use right away or keep it in a covered container in the fridge – it will keep for several days.
Butter Syrup
Ingredients:
• 1 tablespoon butter or ghee
• 1 teaspoon vanilla
• 3 or 4 drops liquid stevia or xylitol to taste
• Pinch ground cinnamon
• Pinch sea saltInstructions:
Heat butter or ghee till melted in a sauce pan. Turn off heat and add the rest of the ingredients and use immediately on french toast or something else.

This seem so delicious!! I’ll try it for sure! Do you have some kind of desert idea without sugar? I’m not exactly doing the candida cleanse but I’m trying to reduce my sugar intake… But I love sweet things and I miss so much having a little sweet after meal!! Thank you 🙂

You listed vanilla extract in this recipe, butnisnt that a type of sugar that should be avoided during the candida cleanse?
Also, will i be able to do the candida cleanse while still on birth control pills?
Lastly, ive been reading other websites on the candida cleane and numerous sites state that starchy vegetables should be avaoidedlike sweet potatoes which you mention in one of your candida videos so im kinda confused about that

I guess I really should have mentioned that the vanilla should be alcohol free vanilla… it’s not sugar though, I don’t think.. It’s like a flavour compound extracted from the vanilla bean
Yes you can do the candida cleanse on the birth control pill… it’s best to not be on it, but if you need to be on it, don’t let it stop you. Make sure you research any herbs or antifungal remedies or anything you decide to take on it to ensure none of them cause a reduction in effectiveness of the pill.
And, yes starchy vegetables should be avoided… I didn’t eat them on any of my past cleanses and I don’t recommend them for it
Vanilla is a plant. It’s not sugar and vanilla extract has no sugar unless it’s listed on the label as an added ingredient.

firstly, i would like to say that this looks really cool! and if i ever get the chance to purchase an eggplant then im definetly making this!
changing subjects…just curious, did you notice how long it took for your skin to break out once you ate something “bad”, such as refined carbs or sugar and that stuff. i know that everyone is different but ive been wondering lately so i know what foods to avoide and whats safe.

Hmm… unfortunately I find that using acne to gauge what’s good and what not isn’t very easy because at least for me I find that I rarely break out right after I eat something bad… it’ll be at least a few days later and then who knows. Well, actually it’s pretty hard to tell at all with any symptoms since most are delayed… allergies are frustrating
hey Tracey, so I’m totally thinking of doing the candida cleanse that’s coming up in April but I have a couple of questions. before I begin I just thought I’d share that usually when I get interested in something or read an article or blurb I always have to OCD cross-reference it with a buttload of other sources. maybe I’m just a skeptic but I usually feel like one person totally cannot be trusted to have all the answers; lately though I’ve just been reading your website a lot. idk if I’m just too busy or lazy to sink my teeth into all this other research but from what i’ve read before and what i have cross-checked i feel like i can trust your judgment. anyway I think I could definitely have a candida issue goin on because.. well.. I love sugar! up until I cut cereal two weeks ago I was eating two to three bowls a day, it was a supposedly natural brand, but still. dark chocolate is a personal weakness, I love fruit, aye I just dig on sweet things in general! and anyway last month I randomly developed intense dandruff so I started taking supplements recommended by my nutritionist and I noticed it improved tremendously but I still have it. I read that the bacteria that causes dandruff, although not listed specifically as candida, thrives on sugar. my mom had a nasty fungal infection on her toe and the nutritionist gave her supplements for it and her toe is now healing. I told her I want to go on the cleanse and she said she doesnt think its necessary and I should just ask for the supplements she took, but I think it’s kind of stupid to just take supplements and not change your lifestyle. I think it won’t make a huge difference if I take something to kill the candida yet continue to supply its troops, ya know? ANYWAY, I’m wondering if you agree with me and if you have any other input on the matter. I know if I do it I’ll be totally alone so I really would love the support from the forum and all the help of having a grocery list etc. I guess I just have cold feet. also I’m really interested in trying to make milk kefir but my skin has been behaving so well lately I’m hestitant to try anything that might cause a break out, as I’ve heard it’s really intense and some people react negativally to introducing it into their system.

Yes, I do agree with you – your intense sugar cravings and dandruff do point to a candida issue – and you are right that you do need to change your diet for a while for it! Supplements can’t make up for diet.
Anyway, I’d love to have you in the hosted cleanse next month 🙂 But I will warn you that many people do have mini detox breakouts in the beginning of the cleanse, not just from kefir but from the general diet change/sugar withdrawal/yeast dying and releasing toxins. Many people were quite successful in clearing their acne though after a couple of weeks on the cleanse. I just wanted to warn you though as you seem concerned with detox breakouts and I want to be honest!
hey tracy, sorry for the super lagged response but I’ve been doing some serious thinking and I am almost assured that I can do the cleanse. I’ve talked to my mom about how our groceries will look more or less and she seems to have come around and claims she will support me 🙂 and since we’ve been transitioning into a not super strict but definitely paleo lifestyle we cut out grains, processed sugar and we’ve never liked dairy (with the exception of cheese and yogurt, but that hasn’t been in the house for months.)
this morning I spoke to my nutritionist and told him how I was thinking of doing the cleanse and he told me he could give me a probiotic and a yeast-killing supplement (the brand he sells is called standard process, have you heard of it?) I’m not sure what else I need, I have to click the page again and make sure but I am still kind of concerned about the expenses. I know it’s
not much but since I quit my job a little bit goes a long way. any words of encouragement?! 🙂
also I totally appreciate your honesty on the detox break out possibilities and I’ve rationalized that breaking out to clear my skin sounds like a good trade off. I’ve dealt with it for so long spending money on all the WRONG stuff, now that i know better i think I shouldn’t be so quick to deprive myself from trying to heal it with good and natural alternatives.
Hi Sam – that’s basically all you need aside from food. Oh I also advise some psyllium husk, but that’s really cheap. Glad to have you on board with the cleanse 😀

Mmmmm. I don’t know if I’m brave enough to try the eggplant french toast yet.. BUT! The syrup sounds great! I am on a bit of a candida cleanse right now and not having and sugar so I think I will try making some almond meal pancakes with the sugar you’ve suggested here. Hey girl! I tried making the ginger syrup.. Whatever I did, didn’t work. It was super watery.. 4 cups of water to 4 inches ginger… Right? Help! It sounds so good!!! 🙂
Hi Carli – hmm, I guess it just needs less water then… or needs to boil longer until it all reduces. I’ll be honest, I haven’t gotten around to trying that one yet… I’m too impartial to the butter one! haha
Yeah, The butter one is way better and easier! I let the ginger reduce for 30 min before I surrendered. 🙁 I’ll experiment a bit and see if I can come up with something. If im successful I’ll be sure to let you know. 🙂
I tried this recipe today and to be honest, I wasn’t expecting to be this good :O I thought it would just taste like eggplant with cinnamon but it has a really nice texture 🙂 I will try to remind this recipe

Had this with butter sauce for breakfast this morning. I suggest slicing the eggplant into thin strips as opposed to the cubes! DELICIOUS and very satisfying. Awesome for someone trying to avoid grains!
greetings tracy!! quick question, im doing the candida cleanse here soon and i was wondering if i would be allowed to make my own bread? mind you it would be made with a flour thats allowed with noooo sweetners and the oil being used would be coconut. yay or nay? thaaaanks 🙂
Hi Trish, yes that sounds fine 🙂 Buckwheat flour, coconut flour, or almond flour (or some combo of the three) is probably your best bet
No reflection on the chef…but unless you slice this paper thin, it tastes remarkable like Eggplant. Ick. I couldn’t eat it. You have to cover up the flavor with the syrup. For me, I’d rather just use a grain-free bread of say goodbye to french toast. I don’t think this is an acceptable substitute for french toast. I’ll stick to eggplant for savory dishes.
How essential are the eggs to this recipe? If I just left them out, would the whole thing fall apart?
Yeah, I’d say pretty essential. Otherwise it wouldn’t be anything like french toast, just fried eggplant
I just made the French toast, I didn’t expect it to taste so good:) I used stevia powder, which I’d used for the first time, and it turned great. I’ve been struggling to stay full on the candida diet as I’m vegetarian, but that hit the spot:) thanks
